Keto Chocolate Truffles Recipe

One of the hardest parts of going low carb or keto is handling all of the dessert cravings!

I don’t mind eating low carb at mealtimes, or even skipping sugar in my beverages or snacks. But dessert… skipping dessert is just torture.

So, as a special low carb treat, I made these keto chocolate truffles that taste just like red velvet cake pops! These bite-sized chocolates hit the spot so perfectly, I only need one or two to completely satisfy my dessert cravings.

Can these keto chocolates be frozen? I just keep them in a sealed container in the fridge and indulge when needed since this recipe only makes 12-16 truffles and they last in the fridge for up to two weeks without any quality loss. However, they can be frozen – just the cocoa butter coating may crack when thawing. (You can opt to leave that off and just make the truffles without their “candy coating.”)

These would be perfect for entertaining – whether you are low carb or not, chances are one of your guests might be, so having a low carb treat on hand is a great way to ensure everyone feels treated!

For my low carb friends, these low carb red velvet truffles work out to less than 1g net carbs per truffle.

RED SUGAR FOR DECORATION (OPTIONAL):

  • 1/4 cup of Stevia for baking
  • Red food coloring

Tip: If you prefer the Truffles a little darker or lighter in color, adjust the food coloring to suit your desired shade of red.

How to Make Make Keto Chocolate Truffles

Line a cookie sheet with parchment paper, and set aside.

Place 1/4 cup of Stevia in a shallow dish, add several drops of Red food coloring and mix until desired shade of red is reached, and set aside.

In a mixing bowl, add the softened cream cheese, butter and Stevia, and stir until light and fluffy.

Then add the chocolate protein powder and vanilla, and mix until smooth.

Add the drops of food coloring, and stir until the food coloring is blended into the cream cheese mixture.

Take about a tablespoonful of the mixture, and roll into balls, and place on the parchment lined cookie sheet; continue until all the mixture has been rolled into balls, place in freezer for 30 minutes.

Place the cocoa butter in the microwave in a microwave safe bowl, and melt at 10 second intervals, until the butter is melted and smooth when stirred.

Dip the balls into the cocoa butter, and place back onto the parchment paper lined cookie sheet.

When all balls have been dipped, sprinkle with red stevia and place the cookie sheet into the freezer to set the cocoa butter.

Leave in the freezer for at least 4 hours to completely set, or overnight for best results in an air tight container.
