Hi, It looks delicious. But it looks like a lot of sugar. Do you think we could use less sugar making it. Maybe 1 cup?

I have been making one for several years using 1 cup of water to 1/2 cup of sugar cooking it on the stove to cook until thickened. Instead of adding regular jello, I use sugar free strawberry using half of the packet to get a flavorful ruby color mixture. I usually use a graham crust, but on occasion I use a chocolate crust and add orange zest to the gelatin mixture befor spooning over the strawberries. I prep the strawberries so they are whole and put them upright as close together as possible. Then after the gelatin mixture has cooled slightly, I spoon over the mixture over each strawberry. After each one is coated and shiny, I pour the rest of the mixture over it. If you happen to try the chocolate version, you can also lightly drizzle a little bit of chocolate syrup over pie before serving. It chills quickly and can be ready in about an hour after making.

It is used in baking and other things. It is a thickener . Found with the baking soda and such at the store.

One of family favorites. Try making it with Bisquick’s short pie crust…it’s like shortcake! And very easy. Grands and I are making this today….doubling and making a 9 x 11″ pan full.

Try this version:
Same pie crust but filling and whipped topping slightly different.
1 small pkg sugar free strawberry jello
1st small pkg cook n serve vanilla pudding
1 can pineapple tidbits – strain and reserve juice
Mix pineapple juice with water to make 1 1/2 cups, bring to boil. Cool slightly, poor over strawberries and poor into pie crust. Chill
Mix pineapple tidbits with whipped topping, can also add toasted coconut flakes if desired.
Added flavor instead of cornstarch for thickening agent.Reply

I make this strawberry pie but don’t use the pineapple. Just jello, cook and serve vanilla pudding and 2 cups of water. Also use graham cracker crust. So simple and very good. Just like Big Boy.

Big Boys/Shoney’s Strawberry Pie was delicious. Except, they had this big tub of strawberry “goo” that they mixed the strawberries with. It wasn’t jello – more like a smooth gel. Gross to make, but still tasted great. And yes, I used to work there in the 70’s.

For pot luck meals I’ve made this for years in a graham cracker crust in a 9×9 Inch square pan. Must easier to serve & more servings than in a pie.
